Four Sixes Ranch Steakhouse, the "Yellowstone" creator's steakhouse that ran as a pop-up at Wynn starting in 2024, is getting a permanent home at MGM Grand in early 2027, in the space Crush American Grill left behind. MGM says the menu will be new, built around prime beef and cuts that come straight from Sheridan's 260,000-acre Four Sixes Ranch in Texas, with Texas-style recipes, craft cocktails and rare spirits to go with it. The dining room is being designed by Charisse Cardenas, who did production design for "Landman" and "Lioness," and its walls will run custom footage of the American West from Sheridan. An exact opening date and the menu haven't been announced yet.

New Menu: Butcher & Thief adds a gin rigatoni, Wagyu cuts and Chicago clam chowder for fall

Butcher & Thief, chef Cory Harwell's neighborhood steakhouse on West Sunset Road, has a new fall menu with a $30 sausage rigatoni that swaps gin into the tomato sauce, a $14 Chicago clam chowder that mixes Manhattan and New England styles with Italian sausage, and grilled scallops in garlic chili butter for $21. Two Wagyu cuts join the steak list, a 6-ounce Westholme flank for $38 and a 6-ounce A5 tri-tip from Kagoshima for $79, and dessert now includes a pineapple upside-down sundae and a gluten-free carrot cake. Happy hour still runs daily from 3 to 5:30 p.m., so it's an easy way to try the place without going all in on steak.
