The Wise Ox, chef Brad Wise's butcher shop and deli from San Diego, opened Oct 22 at UnCommons in the southwest, where his Rare Society steakhouse already lives, and it's the first Wise Ox outside Southern California. The butcher counter carries premium beef, heritage pork, all-natural poultry, house-made sausages and stocks, and dry-aged steaks, cut by a crew of butchers and chefs who can tell you how to cook what you buy. On the deli side, look for a cheesesteak stuffed with shaved New York strip on an Amoroso's roll, a dry-aged burger with bacon and Havarti, a hot honey breakfast sandwich on challah, and fries cooked in beef fat. It's open Wednesday through Sunday, 10 a.m. to 6 p.m., with sandwiches until 5.
