The Corner Store, the SoHo NYC American dining room from Catch Hospitality Group (Eugene Remm / Tilman Fertitta), sets a hard open for Monday, Nov 9, 2026, at The Cosmopolitan of Las Vegas, 3708 S Las Vegas Blvd, on the third floor in the old Blue Ribbon space. Chefs Michael Vignola (New York) and Daniel Bernardo (Vegas executive chef) are running the first expansion of the brand, with Rockwell Group design and a private dining room for up to 24. Hours are Sun–Thu 5–10 p.m. and Fri–Sat 5 p.m.–late, and reservations are already live through Cosmopolitan dining or 702-675-9828. Put it on the Cosmo dinner calendar if you want a booked table before the room gets loud.

Station Casinos is reshuffling Eat Your Heart Out at Durango Casino & Resort, 6915 S Durango Dr, as the north-side expansion builds out. Uncle Paulie’s already closed Wednesday, Oct 1, 2026, and Yu-Or-Mi Sushi plus Vesta Coffee Roasters (food hall and lobby) both have a last day of Monday, Nov 10, 2026. A separate Vesta is under construction at 7120 Blue Diamond Rd, Suite A-100, with no open date yet, so treat that as context only if Blue Diamond is your coffee corridor.
